Ingredients for making Kulcha-
– Flour – 2 cups
Curd- 1/2 cup
Baking soda – 1/2 tsp
Sugar powder – 2 tbsp
– Dry flour
– Salt – as per taste
How to make potato kulcha-
To make Aloo Kulcha, first boil the potatoes, peel them and mash them in a bowl. Now mix the mashed potatoes with red chilli powder, garam masala, chaat masala, green chillies, coriander leaves and salt.
Now in another bowl mix flour, sugar, baking soda, curd and salt to taste. Now add water little by little to this flour and make a soft dough out of it. After kneading the dough keep it aside for 20 minutes.
After the prescribed time add a spoonful of oil to the flour and whisk it again. Now make big balls of this dough. Now take a big ball and press lightly. Now add dry flour to it and roll lightly.
Now add a spoonful of potato mixture to it and pack it from all sides to make a dough. Now press one side of the dough with coriander leaves. After that, after rolling the dough, add some flour to it and roll it to your desired shape.
Now heat a nonstick tawa (frying pan) on medium heat. Now pour some water on the rolled kulcha and put it in the pan. Care should be taken that the kulcha on the pan is not sticking to the side of the coriander leaves. Adding water will make the kulcha stick to the pan well. When the kulcha is cooked well on one side, flip the tawa over gas flame. By doing this, the kulcha next to the coriander leaves will also be cooked well.
When the kulcha is cooked well, remove it from the pan and apply butter on it. Your potato kulcha is ready. Serve with yogurt or raita.
