2 tbsp ghee
3 1/2 cups milk
3/4 cup sugar
3/4 cup milk powder
2 drops of food coloring
1 cup grated coconut
Step 1/8 Peel the bottle gourd
Peel the bottle gourd and remove the hard seeds. Now crush the potal and take it out in a container.
Step 2/8 Roast the Bitter gourd
Heat 1 tbsp ghee in a pan. Add the grated bottle gourd and fry for 5-6 minutes or until soft.
Step 3/8 Add the milk
Now add 2 cups of milk and cook for 20-22 minutes.
Step 4/8 Add sugar and color
Now add sugar and green food in it. Cook for a few minutes or until the sugar is completely dissolved. Turn off the flame and keep aside.
Step 5/8 Make the coconut mixture
Heat 1 tbsp ghee in another pan. Add 1.5 cups of milk and bring to a boil. Add grated coconut and mix. Cook for 8-10 minutes or until mixture thickens.
Step 6/8 Mix the two mixtures together
Add the thick coconut mixture to the bottle gourd mixture. Keep on medium heat and cook for another 8-10 minutes.
Step 7/8 Place in a mold and let it set
Now pour the barfi mixture in a mold and take it out. Let it set for 3-4 hours or until it holds its shape properly.
