Cooked rice – 2 cups
Tomatoes – 3-4
Ginger paste – 1 tsp
Peas – 1/2 cup
Green chillies- 2-3
Curry leaves – 8-10
Desi ghee- 3 tbsp
Green coriander leaves – 3 tbsp
Cumin – 1/2 tsp
Black pepper – 1/2 tsp
Garam Masala – 1/2 tsp
Cloves – 4-5
Cinnamon – half inch pieces
Big Cardamom – 2
Salt – as per taste
Tomato Casserole Recipe
To make tomato pulao, first boil the rice. Then cut tomatoes, green chillies, green coriander leaves into fine pieces. Now make a paste of tomatoes and green chillies with the help of a mixer. Take out this paste in a bowl and keep aside. Now grind whole masala, cloves, pepper, cinnamon. If you want, you can grind it coarsely in a mixer.
Now heat a pan with ghee on medium flame. When the ghee melts add the peas and cover the pan and cook the peas for about 1 minute. After cooking, when the peas become soft, take them out and keep them in a bowl. Now add cumin seeds in the same pan. When the cumin starts to splutter, add the two coarse spices and stir fry with a spoon. Then cook with tomato-green chili paste in masala.
Add ginger paste and curry leaves and fry for a while. Fry this mixture till the ghee starts separating from the spices. Now add the pre-boiled peas and green coriander to this masala. After that add the cooked rice, mix well with all the ingredients and cook for 1-2 minutes. After that turn off the gas. Your delicious tomato pulao is ready. It can be served with chutney, yogurt or pickles.
