Ingredients for making Kabuli Pulao-
600 grams of mutton
2 teaspoons of salt
4 cloves of garlic
1/2 cup sugar
10 grams of raisins
10 grams of almonds
1 tablespoon cumin seeds
8 green chillies
1 gram cumin powder
1/2 cup yogurt
700 grams of basmati rice
4 cups of water
1 onion
2 carrots
1 tablespoon green cardamom
10 grams of cashews
10 grams of pistachios
4 tablespoons refined oil
1 tablespoon chopped garlic
Coriander powder 1 tsp
10 grams garam masala powder
How to make Kabuli Pulao-
To make your own Kabuli Pulao, take a pan and add mutton, 3 cups of water, half onion, salt, garlic cloves, half garam masala. Cook the mixture till the mutton becomes soft. When done, separate the mutton from the stock and set aside. Take a bowl and put basmati rice in it. Rinse well with cold water and then soak in enough water for about 25-30 minutes. Take another pan and add one cup of water, sugar, carrot, cardamom powder, almonds, cashews, pistachios. Stir continuously for about 3 minutes. Also, in a separate pan add cooking oil, whole cumin seeds, half onion, 5 grams garam masala and green chillies. Fry everything well till golden. In the same pan add cooked mutton, salt, garlic, cumin powder, curd and coriander powder. Cook for about 5 minutes. Now it’s time to add the mutton stock and soaked rice. Cook everything till the rice is well cooked. Garnish with fried dry fruits first. Let it boil for another 15 minutes. Your Kabuli Pulao is ready to serve.
