First heat oil in a pan and add whole red chillies and lots of garlic. Then green chilli paste and red chilli paste (make a paste by mixing green chillies and kashmiri red chillies, add separately). Fry well. Then add chopped onion (spring onion) and ginger. Add your vegetables after frying this mixture. Remember not to overcook them. Add steamed rice (or leftover rice). Add salt to taste and a dash of sugar, some soy sauce and vinegar to balance the taste. Mix all this well and sprinkle some green onion leaves. Serve it with desi ghee.
