2 cups noodles
2 pieces of chopped ginger
1/2 cup chopped baby corn
500 ml coconut milk
1 liter vegetarian stock
Salt as required
2 chopped Thai chili peppers (optional)
1/2 cup button mushrooms
2 tablespoons Thai green curry paste
4 tablespoons lemon juice
1 tablespoon refined oil
How to make Coconut Soup Noodles-
To make this delicious noodle soup recipe, place a pan on medium heat and add noodles to it. Add enough water to cook the noodles and let them boil for half. When done keep aside. In a saucepan lightly coated with oil, add chillies, ginger and fry for 30 seconds. Add the baby corn and sliced mushrooms and cook for 2 minutes. Once it starts releasing water, add the curry paste and mix well. Mix the stock well and boil for 5 minutes. Add coconut milk and lemon juice. Add salt to taste, mix everything and keep mixing the spices. Now add the half boiled noodles to the pan and cook till the soup is ready. Once done, serve hot.
